How to pick the freshest seafood
If you’re not sure how to select the best fish for your dish, we’re here to help. There are a few things you can look out for when choosing your fresh seafood, from sight to smell.
Assess the physical appearance
Fresh fish should never look dull, it should be bright in colour and glossy. The skin should almost have a metallic glow. If you notice any bruising or discolouration, this could be a sign that the fish isn’t as fresh as it could be. Crustaceans and molluscs should also be bright, with no discolouration close to the joints. All parts of the shellfish should be intact – including shells and tentacles.
Ignore cloudy eyes
You might have been told to avoid cloudy eyes in the past, but that’s actually untrue! Cloudy eyes can be caused by melting ice, which is common and for the most part harmless. You should check the eyes to make sure they’re full and firm, this will be a more reasonable indication of freshness.
Check the gills
Checking the gills is the easiest way to work out the freshness of a whole fish. Fresh fish should have purple, red or pink gills. As fish lose their freshness, the gills will become dull, dry, and greyish brown.
Check the shells
Crustaceans should have firm shells, as this means the meat inside will be at its freshest. The shells will become softer over time, reducing the quality and flavour of the crab meat. Despite this, soft shells can be deep-fried and enjoyed whole.
Give it a sniff!
Last, but certainly not least, check the smell! The smell is the biggest indicator of whether or not your seafood is fresh. A salty, seaweed smell is a good sign – but if it starts to smell unsavoury, steer clear.

If you don’t want to worry about selecting your fish each month, we’ve got the perfect option for you. Our ‘A Taste of Looe’ subscription box is £25 on the first of each month and includes a selection of fresh fish caught by Looe boats. The subscription will be delivered to you on the first Wednesday of each month. This is a variation of our ‘Catch of the Day’ boxes, giving you an insight into what species are available off the Cornish Coast. This box will include 4-5 x 300g packs (a minimum of 8-10 portions).

Please note: To work with a small inshore fleet, we buy fish when it’s in season, so we have invested in a blast freezer for this product. The fish will be landed in the early hours every morning, filleted by hand, vacuum-packed instantly, and then blast frozen to -22. All within hours of being landed!
